What a cloud kitchen POS must do
A cloud kitchen (also called a ghost kitchen) cooks for delivery and takeaway. The POS has to:
- Name the order (customer or aggregator ticket id), not only “Table 4.”
- Send a packing list to the kitchen display.
- Deduct chicken, wrap, and sauce so you do not 86 a dish at 10pm by surprise.
- Close cash and digital payments you actually take at the door.
- Keep billing alive in offline mode when the building Wi-Fi dies.
Floor maps and QR table tents matter less here. Speed at the pass matters more.
Bangladesh-specific pressure
Cloud kitchens in Dhaka often sit in cheap industrial floors with ugly internet. Riders stack at iftar. Staff mix Bangla item names with English aggregator names. A POS that only knows “dine-in / takeaway” without a customer name will pack the wrong bag.
Aggregator apps (Foodpanda, Pathao Food) are a separate pipe. Some local POS vendors ingest those tickets into one KDS. Riser POS does not publish Foodpanda or Pathao ingest. If 80% of orders arrive in those apps, you either:
- Retype them into Riser POS (works at low volume; fails at 60 bags/hour), or

Do not run the only copy of the menu in a rider’s aggregator tablet. Your POS is the source of recipes and stock.
Stock in a delivery kitchen
Delivery kitchens die on packaging and protein, not on chairs. Turn on inventory for:
- Main proteins
- Breads and wraps
- Branded bags and stickers
Leave whole-spice grams alone until you have a person who will count them. A POS cannot fix a store that never does a weekly count.
